Ghost Casserole Recipe

I received an email from a site visitor who asked:
"On the second page of your Meal Planning Chart (meal_planning.pdf) under meal ideas is something called 'ghost casserole'. I have been unable to find the recipe and it isn't in your downloadable LDS Cookbook. Do you happen to have the recipe?"
Yes, I do have the Ghost Casserole recipe. There's probably another name for it but that's the name I gave it since I didn't know what it was called. When I first saw this dish the mashed potatoes were shaped as ghosts with BBQ sauce eyes for a Halloween party. So here's the recipe:
Ghost Casserole

Mix together in a 9x13 pan:
  • 1 lb ground beef, cooked and drained
  • 1 can of green beans
  • 1 can of cream of mushroom soup (or other cream soup)

Place a layer of mashed potatoes on top (you don't have to make them into ghost shapes, but can layer the potatoes flat on top), followed with a layer of shredded cheese (I like to use Colby Jack). Bake in 350 degree oven until heated all the way through and cheese is melted. This dish can also be frozen and heated at a later time. Enjoy!
I think a similar type recipe to this one is called Shepherd's Pie, although I've only made that one with corn instead of green beans and without the cheese on top. My family and I like the Ghost Casserole much better.

This is just like what we call Tator Tot Casserole. Don’t add potatoes or cheese, use frozen Tator Tots.
